Culinary Science in the Workplace

Clients and I conducted a bit of science the other day when neighbors dropped off an odd looking fruit. My iPhone scanner app told us it was a papaya. None of us had ever seen or tried one.

After a bisecting cut we were amazed at the fruit's form. But the real test was its flavor when served with rice crispies: It's a keeper.

I have been told that you can eat the seeds as well. They use it in the making of meat tenderizer. Do not marinate meat in the fruit for to long it can breakdown the meat to have a displeasing texture. Ripe and fresh papaya can have a wonderful taste, however under ripe can be hard and cardboard like in texture and taste.
